Chef Didier Durand:From France with Love

Bonjour aux gourmands! This week, we celebrate the culinary delights of Chef Didier Durand who founded Cyrano’s On-The Go to share traditional French dishes across Chicago.

Chef Didier began his culinary trade at a cooking school in Bergerac, France. In 1986, he was invited to work on a six month visa as the Sous-Chef at Carlos’, one of the premier fine dining restaurants in Chicagoland. He’s never looked back, serving as Executive Chef at renowned restaurants throughout the country, as well as owning and serving as Executive Chef at his very own Cyrano’s Bistrot & Wine Bar for 20 years and Cyrano’s Cafe On The Chicago Riverwalk for 14 years. Cyrano’s On-The-Go is the latest incarnation of his culinary journey and has become beloved at the 61st Street Farmers Market.

When asked what is unique about his cooking and business, Chef Didier says, “Simplicity!” He added, “Delivering great food at a great value. It may sound easy, but that is my foundation.”

Whether it’s coq au vin–a traditional French stew of chicken braised in red wine with bacon, mushrooms, and onions, lobster bisque, or a smoked salmon with tarragon spread, Chef Didier delivers those dishes at great value for his customers. He loves chatting with customers at his market stand, hearing their stories, and sharing his food as part of the special connection between him and the Market community.

As for a secret de chef from this celebrated chef de cuisine? He says, “When you wake up in the morning, ask yourself, ‘What’s for dinner?’ Then marinate ahead of time, cook together, and share responsibilities.”
